Coming Soon! New Eatery in a Historic Gem
Downtown Gloversville has seen a remarkable transformation at 33 N. Main St. Owners Dan Lentini and Lauren Day have been diligently restoring the historic building, recapturing its original luster and charm as they prepare to open their new restaurant, a venture anticipated to serve Gloversville and the surrounding region.

Gloversville has taken notice of their work as Mayor Vincent DeSantis presented the 2025 Thomas J. Ruller Historic Preservation Award to the couple on Feb. 15, an honor that recognizes the outstanding restoration and preservation of historic buildings.

Originally home to The Opera House Café, the one-story building has housed various businesses over the years, including Johnson & Murphy Shoes, Louise Procopio’s Dress Shop, and the North Star Café. Over time, renovations had obscured much of the building's original historic character.

Lentini and Day purchased the building in 2022 and embarked on a restoration project to revive its Victorian-era charm. Their efforts included uncovering and restoring original stained-glass elements, including a stained-glass archway, installing a 1930s iron and glass entryway, and creating new art, designs, and furnishings appropriate for the planned restaurant.

The Sage & Cedar Café will be a new fast-casual restaurant offering moderately priced, healthy, and organic food and beverages, with both take-out and dine-in options.

Dan Lentini brings extensive culinary experience to the venture, having served as head chef at several regional restaurants, most recently at Mohawk Harvest Cooperative Market. Lauren Day's expertise lies in restaurant operations and marketing, with experience working with businesses such as Beekman 1802, The Apothecary, and North Star. Both are lifelong residents of Fulton/Montgomery counties.
Slated to open soon, Sage & Cedar will feature farm-to-table meals, including specialty bowls and customized sandwiches.
